{"id":313,"date":"2025-03-02T21:31:46","date_gmt":"2025-03-02T20:31:46","guid":{"rendered":"https:\/\/safran-angoumois.fr\/?p=313"},"modified":"2025-03-02T21:31:47","modified_gmt":"2025-03-02T20:31:47","slug":"journee-safranologie","status":"publish","type":"post","link":"https:\/\/safran-angoumois.fr\/index.php\/2025\/03\/02\/journee-safranologie\/","title":{"rendered":"Journ\u00e9e safranologie"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\"><strong>AGROTEC \u2013 Agen \u2013 20 F\u00e9vrier 25<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans le cadre de notre projet d\u2019IGP, quelques adh\u00e9rents, chefs,&nbsp; producteurs et futurs producteurs, ont accept\u00e9 d\u2019accompagner notre vice-Pr\u00e9sident Guillaume Bouyer, pour se rendre \u00e0 Agen au laboratoire Agrotec d&rsquo;analyses sensorielles et physico-chimiques .<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le groupe de travail constitu\u00e9, a ainsi \u00e9tabli sous la direction de Monsieur Fran\u00e7ois GERMON Directeur du d\u00e9veloppement et de Madame Syl\u00e8ne BRIANCEAU responsable de la recherche au sein d\u2019Agrotec Agen, une grille de caract\u00e9risation de 6 safrans diff\u00e9rents dont 3 safrans de producteurs de safran de l\u2019Angoumois.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Au cours de cette journ\u00e9e, chacun a pu d\u00e9guster et analyser chacun des 6 safrans de mani\u00e8re olfactive et gustative dans deux matrices diff\u00e9rentes ( sal\u00e9e et sucr\u00e9e). Pour chacun des 8 d\u00e9gustateurs, la d\u00e9gustation des 16 \u00e9chantillons s\u2019est faite de fa\u00e7on cloisonn\u00e9e et \u00e0 l\u2019aveugle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Au terme de la journ\u00e9e, une premi\u00e8re caract\u00e9risation de chacun des 6 safrans a pu \u00eatre faite. Ce qui a permis de distinguer v\u00e9ritablement le safran de l\u2019angoumois (qui suit une charte qualit\u00e9 de production commune) et les autres safrans (marocain, espagnol et iranien).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le lundi 24 F\u00e9vrier une autre journ\u00e9e de d\u00e9gustation aura lieu, aupr\u00e8s d\u2019un panel de consommateurs ind\u00e9pendant et non initi\u00e9, qui fera le m\u00eame travail pour valider \u00e0 la fois &nbsp;les protocoles et la grille de description.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une fois la validation effectu\u00e9e, la caract\u00e9risation du safran de l\u2019Angoumois suivant cette grille sera incorpor\u00e9e au dossier d\u2019IGP.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ces op\u00e9rations de d\u00e9gustation et de comparaison des safrans pourront \u00eatre r\u00e9p\u00e9t\u00e9es avec nos adh\u00e9rents et les grands chefs cuisiniers pour mettre en avant la qualit\u00e9 du safran de
